haccoba-Craft Sake Brewery- From the Ground Up: Making New Sake from a Brand-new Place

In February 2021, a new sake brewery called "haccoba" was established in the Odaka district of Minamisoma City. The brewery was built in an old, renovated house in a part of Minamisoma, Fukushima abandoned by residents after the 2011 Fukushima nuclear disaster. Here, one young man been pursuing his sake-making dream, building a new business from the ground up.

Founder Sato Taisuke  moved from Tokyo to Fukushima in 2020. He adopts traditional sake brewing as his base approach while adding beer hops and other unique ingredients into the mix as part of free and uninhibited sake production that brings together different alcohol genres.

The people of Odaka love sake, and Sato hopes to make it a place where people can pursue open-minded sake creation not constrained by convention. Tireless in his efforts, he continues working hard to cultivate new culture for the town.
